Suddenly my heart, mind, and stomach demanded something cheesy, buttery, and creamy. I think it wants mac and cheese. So let’s prepare some stretchy cheesy shots with these amazing recipes.   

Baked Macaroni and Cheese

Baked Macaroni and Cheese

PREPARATION TIME: 15 minutes

SERVING: 6 people

INGREDIENTS:

  • 1 ½ cups dry elbow macaroni
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups of milk
  • ½ teaspoon salt and pepper
  • 2 cups of shredded cheese

INSTRUCTIONS:

  • Preheat oven to 350 degrees.
  • Boil the elbow macaroni in a pot of water.
  • While the macaroni gets boiled, melt the butter in a larger pot and add all purpose flour to it. Stir over medium heat for 1-2 minutes until the mixture is lightly browned.
  • Add milk and whisk to remove lumps. Add salt and pepper to it.
  • Keep stirring the mixture until the sauce thickens and starts to bubble.
  • Stir in the cheese and whisk until melted completely.
  • Now add the boiled elbow macaroni to the sauce. Stir it properly and bake mac and cheese in a greased pan for 20-25 minutes till it gets brown and bubbly.
  • Finally, your baked macaroni and cheese is ready to serve!

Butternut Squash Mac and Cheese

Butternut Squash Mac and Cheese

PREPARATION TIME: 10 minutes

SERVING: 6 people

INGREDIENTS:

  • 4 cups butternut squash
  • 1 cup low-sodium chicken broth
  • 1 cup milk
  • Salt and pepper to taste
  • 2 tablespoons butter
  • ¼ teaspoon ground nutmeg
  • 1 cup cheddar cheese
  • 2 cups elbow macaroni

INSTRUCTIONS:

  • Boil elbow macaroni in a pot of salted water.
  • Melt butter in the saucepan and add butternut squash, chicken broth and milk to it. Season it with salt and pepper and then bring it to simmer. Cook and stir the mixture on low flame for about 15 minutes. Add squash mixture to a blender and puree until it gets smooth.
  • Keep the squash aside and now again melt butter in another pan and add squash puree and nutmeg to it. Cook on low flame for about 5 minutes and then add cheese and stir until it gets melted and thickened.
  • You can now add elbow macaroni to the mixture and let it cook for some time. And yes, your scrumptious mac and cheese is ready!

Creamy Macaroni and Cheese

SERVING: 8 people

INGREDIENTS:

  • 1 pound elbow macaroni
  • ½ cup butter
  • ¼ cup all-purpose flour
  • 5 cups of milk
  • 3 cups cheddar cheese (shredded)
  • 1 cup American cheese (sliced)
  • Salt and pepper to taste

INSTRUCTIONS:

  • Boil elbow macaroni in a vessel while melt butter in a separate pan.
  • Add all purpose flour and whisk it properly to avoid lumps. Mix until it gets golden brown in color.
  • Add milk to it and slowly whisk for about 5 minutes until it gets smooth and thick.
  • Now add cheddar cheese to it until it gets completely melted and then season to taste with salt and pepper.
  • You can finally add boiled elbow macaroni to the white sauce. Serve it hot and enjoy the lip-smacking mac and cheese.
